I spent fifteen years working in kitchens. Hotels, cafes, restaurants, owned a couple myself. Then I left it all and went corporate, and for the first time in my adult life I had to cook dinner like everyone else. No prep team, no plan. Just me walking through the door drained, a newborn in the background, nothing ready.
